As soon as Spring and Summer hit, I swear I can eat my weight in fruit! I absolutely love it. I love it so much, you’ll even catch me eating watermelon with a spoon. Does anyone else do that?
Summer is sadly coming to an end so I decided to make a rainbow inspired fruit pizza full of my favorites — strawberries, raspberries, mandarin oranges, pineapple, kiwi, blueberries and grapes!


It’s better to use fruits that do not brown easily such as bananas and apples.
Fruit pizza is perfect to create for parties or as a beautiful dessert. You can make one big pizza to share or smaller cookie size ones for a personal treat. The options (and toppings) are endless!

HOW TO MAKE YOUR OWN FRUIT PIZZA IN 3 SIMPLE STEPS:
STEP 1: MAKE YOUR SUGAR COOKIE CRUST
I like to to use the Pillsbury Ready To Bake cookie dough because it’s way less prep, but if you have a favorite sugar cookie recipe that will work too!
I roll the dough onto my pizza pan until it’s my desired size and thickness. Bake as directed but be sure to not overbake! Your fruit pizza will taste much better when it’s soft and chewy!
Allow your cookie pizza to cool completely before adding your cream cheese topping.
STEP 2: CREAM CHEESE TOPPING
I’ve seen a few different variations but I like to keep it simple! You will need:
- One 12oz crewmen cheese, softened
- 1 teaspoon vanilla
- 3/4 cup powdered sugar
- (if I’m looking for some extra sweetness I like to add a few scoops of cool whip)
Blend ingredients together use stand alone mixer or hand mixer until smooth. Spread your desired amount over your sugar cookie crust. Make sure the crust is cooled completely to make sure your spread doesn’t melt.
STEP 3: DECORATE WITH FRUIT
Now for the fun part! Put out bowls and let your guests decorate their own or create your own fun patterns! For this one I decided to do a rainbow pattern and add a lot of vibrant colors! BUT REMEMBER, it’s best not to use fruits that brown easily!
